Only differences are in the DP and cat pipe area as the Welsho found out. If you buy a "long" downpipe to go from the turbo to the centre then it's the same, but the catted dp and cat pipe individually are differently sized on the 06 than the 03-05. The DP being shorter and the CP being longer.
Yes, the ECUTEK reflash. The standard ECU is very good, and Andy flashes it with the ECUTEK custom software which is then mapped to meet your car.

It sounds like "standard" lift off oversteer. Cornering on throttle has the car at a neutral angle, then by shutting the throtle the front end drops, grips more, and the back end gets light.

The one thing about the H+S is that if you decide later to do more than just the backbox, like the deresonated centre section, then it really is pretty damn loud. I'm considering getting a bung made up for mine once the decat is complete. Just for using during the week.
