I don't have a great deal of knowledge on this but I have a Canon Hv-30. It records HD onto miniDV tape and the quality is great. As you are wanting particularly good sound as well I would get an external mic. Particularly as you wont want your camerman getting in the middle of the more formal parts of the wedding.
Another thing to consider is what you are going to do with the resulting footage. My laptop can not handle compiling high definition video and so I have a pile of tapes just waiting for when I get a nice macbook pro or similar It is not a great concern to me as I find the tapes aren't too expensive.
For a wedding I expect you will need a couple of spare batteries as well.

If I was you I would sell the car as soon as possible.
It just wouldn't be the same knowing it had been ragged around and if they knew how to get keys last time they will know how to get keys next time.

My local car club "www.freshadditions.co.uk" do regular monthly meets on the 3rd Sunday of each month at the Fair Acers retail park in Abingdon. We've been getting about 100-120 cars turn up and a handful of Scoobies. There is plenty of room and we have permission to be there from the owners of the retail park and the Police are on board too.
Will come and say hello properly next time.
Good crowd but unfortunately any crowd of cars attracts phone calls about displaying... just please everyone take their rubbish home with them!

I took a rare ride out in my car today (have been cycling to and from work) and saw about 4 different silver Scoobys.
Got a wave from most of them so hello if you are on here too!

This and the similar roundabouts at Hemel and Wycombe are more intimidating than they are difficult to drive.
They are just essentially one roundabout after another. Best of all they don't have traffic lights. Traffic on roundabouts flows so much better when the lights break!
Cropping up more are hamburger roundabouts.
Now these are particularly good at relieving congestion but intimidating when you come across them for the first time. Very weird feeling driving through the middle of a roundabout!

No not in the same league but still a reason for your insurance company not to pay out. There is no point paying hundreds for insurance if it isn't going to pay out if you have a prang.
No matter how minor an impact you think your mods on your risk of crashing, insurance companies will claim it increases the vehicles desirability to thieves.

Where do you recommend I get my Scoob serviced? At the moment I am tempted to travel to Highworth to continue with stamps from the dealership it was bought from.

It may be cheaper to rent a garage to park your car if this may prevent the need for your car to have a tracker fitted.

Yes you need to tell your insurance company about any modification.
Some insurance companies don't charge any extra as long as you tell them but not doing so will render your insurance null and void.
There is no point spending hundreds of pound on insurance if they aren't going to pay out when you need it for the sake of a phone call.

You need to phone some insurance companies for quotes... or even put the details in to the online comparison sites for the insurance questions.

I have only ever bought one Subaru in my life so I can't really say how much you can expect to pay.
I think you will find insurance at your age will be over a grand for any car you want to buy.
Only insurance companies can tell you why insuring mods is more expensive but I will guess at the following.
1- Not all insurance companies allow mods. So by having mods you are restricting the number of insurance companies that will insure you.
2- Modifying cars is generally seen as the preserve of a certain risk element especially at your age. If you are putting stickers and a spoiler on your car to make it look better then you are probably going to try and look better by doing donuts in the car park.
3- If you start modifying a car you generally don't stop. I started with some optional extra wheels and my MX-5 ended up with a bucket seat and roll cage.
