After changing front struts should the tracking be checked and adjusted if necessary?

my opinion would be that it should be checked after changing any suspension / steering component

Cheers

You should get a full 4 wheel alignment done as by removing the bolts that secure the front struts you will also have messed up the camber angles.

Hope this helps.

you will only upset the camber if there is camber adjusting bolts fitted if there is cabs mark the bolt on the strut so AS THEY GO BACK ON THE SAME WAY GEO
